| Tracey in Morris asks: I have a friend, (one of your garden club members), that shows me your newsletter every month. Outstanding job, by the way. And, I really enjoy how you change up your website every month, too. I'm wondering, where do you get those delicious recipes that you put in the newsletter and can anyone submit them to you? Have you thought of having a recipe page on your website? I have a favorite soup recipe that I think your readers would enjoy especially for this time of year and it uses up some of those butternut squashes from the garden. Here it is: Butternut Squash Soup (serves 6) Ingredients 1 tablespoon plus 1 1/2 teaspoons vegetable oil 1 tablespoon plus 1 1/2 teaspoons butter 3/4 cup diced onion 1 cup plus 2 tablespoons diced carrots 6 cups peeled and cubed butternut squash (I bake it first--just enough to soften it up) 4 1/2 cups vegetable stock salt and pepper to taste ground nutmeg to taste 3/4 cup heavy cream Heat the oil and melt the butter in a large pot over medium heat. Cook and stir the onion in the butter and oil under tender. Mix the carrots and squash into the pot. Pour in the vegetable stock, and season with salt, pepper, and nutmeg. Bring to a boil, reduce heat, and simmer until veggies are tender. Puree the soup mixture until smooth then return it to the pot and stir in the heavy cream. Heat slowly, but don't let it boil. Serve warm with a dash of nutmeg. I serve it with fresh buttered croutons. I PROMISE, this is DELICIOUS. I hope your readers like it as much as my family. I invite you to the November 15th meeting at 7:00 p.m. I've never thought of a recipe page on the website, I guess that could be a fun thing to do. Perhaps it will invite more readers to our site. Some of the recipes come from members that actually make them and bring them to our meetings. Some are submitted by our members. Some I find on recipe sites that come in my email...if they look yummy...I share. I personally am not a fan of squash at all, but am posting this recipe for those that are.
